Denver Restaurant Week - SkyBox Grill and Sports Bar

I am a HUGE fan of Denver Restaurant week. I do it every year and have yet to find a year where the memories weren't amazing.


This year was no exception. Dave and I headed to the Skybox Grill which is a new restaurant over looking the Denver cityscape. It is breathtaking to say the least.

We seated ourselves in a fairly quiet restaurant around 7pm, not many people were there so the atmosphere remained casual, comfortable yet a touch of class was evident in the decor and with full surround windows, you don't really need much art work on the walls.


Dave ordered his usual and I got myself a Chocolate cake martini. Yes... that image you have in your head and the mouth watering feeling you just got... go with it.. it's all real. The drink was perfect and I'm certain with some sugary chocolate on the rim the drink will be stellar.

We talked, drank, ate some amazing food and let me suggest the coconut shrimp appetizer, it is seriously my newest craving, I have NEVER tasted coconut shrimp so much like what I'd imagine the Caribbean would be. It's off the charts in my opinion.


Three hours later we went down the 14 floors to the ground level of the hotel to get to the truck, sated, happy and I know when my sister gets here in May... we are going to take her to this one of a kind restaurant, Colorado is all about the views and sometimes those views are just as amazing in the dark as in the day!

Ever try to blog while you are sick?

Yesterday I had a major Blog fail moment. 

I've been working hard on posting every day for the "Bloggy Mom's 365" challenge, and up until yesterday I had made it.


Yesterday I didn't post, I woke up sick, tried to fight it in the morning but couldn't do it!

It is now Sunday night and I'm making up for lost time... I hope you won't hold it against me!

Earthies Wants You to Feel Lucky - Lucky Duck

I am one of the luckiest people I know, why?

Because I think I am.

Pretty confident thoughts don’t you agree? But how could I not think that way?

*I was adopted at 2.5, as a girl, in a rural town in Texas with tons of issues like abandonment, over protectiveness and abuse that was hidden until after I was adopted... but they still loved me.

*When I was struck by a car walking across the street at 12 years old, I did not feel lucky, when they rushed me to the emergency room and put stitches in my head, I did NOT feel lucky. When the doctor told me “If you had taken another step you’d have been killed.”, I felt pretty lucky.

* When I was sitting in the hospital with my 6 year old daughter in a coma from spinal meningitis I didn’t feel very lucky, but now looking at the freshman in college she became without a single side effect, I KNOW I am.

*I was the single mother of 6 amazing children and perfectly happy remaining that way and contrary to my friends who said, “No one is going to want to date a mother of 6 kids long-term”, I found a man who welcomed the whole brood with welcome arms.

*I have a job.

*My friends online, offline and living in my home, are the greatest a girl could ask for.



Many people might not think this Healthy Choice Meal I’m eating is a lucky thing, but I’m eating... I think that makes me lucky.

I don’t know many people would think that being adopted, or going through hardships, or struggling with 6 kids to be lucky... but it taught me so much about them and myself, that I became a better person by having been blessed with a four leaf clover on my back.

You don’t believe I have one there? Well... I can’t actually see my back, so I can’t tell you for sure, but if you do look for it, don’t tell me either way.... I don’t want it to jinx me!

Tie the Knot Thursday - 3/3/2011 - Etsy Wedding Candy Love

Love is so sweet…. So is candy.

So why can’t you mix love, candy and a party. Yea… I plan on it! Get ready for a sweet wedding party on my behalf… here are some totally cute ideas I found this week on Etsy.

(Make sure you click on the photos to see the Etsy site of these amazing creators, they have so much to offer and are all handmade. Who doesn’t love the originality of handmade?)

In case you miss the candy bar, here is a sign… literally... a sign that says, “Come get your sweets, your treats, your mouth hugs” …. Well, not in so many words but you get the drift.


This would be a really cute way to decorate the candy table! It’s better than flowers and she’ll find a way to get it to match your wedding design. I LOVE this idea….

I’d love to have this on the table to let everyone know what is laid out before them. So if they have allergies (like peanuts, egg whites, etc) they don’t get into the delicacies.

Ice cream cones without the mess of ice cream. My daughters would love to eat these and I like the idea I won’t be worried about their beautiful dresses during the reception. Yes… my Type A personality would be worrying about their dresses… it’s what I do.

I have always loved to write. It is a cathartic way for me to express myself and get out any things I have wandering around in my subconscious. Starting this blog was the exact thing I needed three years ago when I was a single mom of six kids.

Today my life is just as busy however my focus is a little different. I work full time still, I have kids in sports, but now I have a significant other that requires attention as well, so much of the attention I had placed on myself has to be split with him.

So when people ask me, "How do you do it all?" My first response is, "I am not sane."
I realize how I make time for myself and my family:

* I make sure to do my computer time when it has the least impact on the family.

* There is a lot of prioritizing and making sure I'm not spreading myself too thin.

* Sometimes I have a cocktail next to the computer, because it's MY time.

* My photos are my memories long after I leave this world, they are just as important to stay a top of, so I sort them and that to me is a legacy I'm creating for my kids.

* This is my second job, and there are times when I walk away from dinner or movie night to get a post done. It's okay.

Don't get down on yourself when you have a day where all you do is stare at a screen, just remember, we are not butter... we should never be spread that thin.

Dinner time

Ever have those days where you had EVERY intention on eating right, or even better, eating a home cooked meal?

Yea... tonight was one of those nights.

But after a wonderful two hours of talking with Dave's folks, Dave and I dragged the teens to Village Inn for dinner.

Sunday Morning Breakfast: French Toast with Hot Buttered Rum Apples

I enjoyed it, I enjoy my kids, even if I think they are weird.

A night full of good intentions ended in a night full of food I didn't have to cook and a kitchen Dave didn't have to clean.

I think that is a win-win situation.
