Spicy Salsa Cheese Sauce for Nachos or dipping

It is SuperBowl time! I love SuperBowl, I love the commercials, the fans, the way the players play.. it's like watching High school kids play the game of a lifetime. I'm enthralled!

As always, Dave and I sat down with a menu plan yesterday to figure out that we are going to make.

This year I chose nachos to go with all of our other foods but I wanted to make it in the crock pot so people could use the cheese for a variety of things and so the flavor had a few hours to meld together.



Spicy Salsa Cheese

Ingredients:

2 pounds Velvetta Cheese, cut up
8 oz Cream Cheese, Cut up
1 envelope taco seasoning mix
1 cup of salsa
Package of pepperoni slices and cut in half



Preparation:

Combine all ingredients in slow cooker. Cover and cook on Low, stirring occasionally until cheese is melted and mixture is hot. Keep warm in slow cooker.

Tip: I thinned it out a little with Evaporated milk when needed to keep it pourable over some warm tortilla chips!

Those memories that won't fade...

There is something magical about seeing the kids face when they spot Mickey Mouse or when Cinderella dances her way on stage. It always brings a tear to my eye and chokes me up to see them smile and wave to the characters before them.

Last night I raced home from work, got the kids packed and ready to go then zipped off to the lightrail to ride in comfort downtown with Dave and the three youngest.





It was Dave's first time and I think he's a pretty big fan, no fighting traffic, no backseat driving from me and the kids loved the new experience.



We got to Disney Live right on time, slipped into our seats and even got some face time with some of my favorite ladies!

Before long we were yelling AbraCadabra and singing along to the music.



My children might not carry these memories with them and when they read my blog in 15-20 years, they might say, "Oh yea... I remember doing that." but I know that when they are all gone I'll pull those memories out and smile.



  • I'll remember them yelling at the stage to bring Mickey Mouse back out.
  • I'll remember them falling asleep before everyone is even in the car
  • I'll remember one hand holding a french fry and the other inside their happy meal box because they couldn't stay away any longer.

Those are the memories that won't fade for me....

Denver Monster Jam - Ticket Giveaway

Monster trucks can fly up to 125 to 130 feet (a distance greater than 14 cars side by side) and up to 35 feet in the air.

The Party in the Pits is before both of the 2:00 p.m. shows from 11:30 a.m. – 1:00 p.m. where fans receive the experience of a lifetime by getting access to their favorite Monster Jam drivers and monster trucks. Fans get the exclusive opportunity to chat one-on-one with their favorite drivers, get autographs, and get up close to the massive trucks! This is the first year that there are TWO Party in the Pits to chose from. Get your Pits Pass at the Pepsi Center Box Office day-of-show for $5 each. A valid Monster Jam 2pm show ticket for that day’s performance must accompany each Pit Pass to gain admission to the Party in the Pits.

Tie the Knot Thursday - 2/3/11

I am a bird lover, always have been. My first bird’s name was Woodstock, and then there was Baby, Snoopy… then Calvin and Hobbes, the last three were ring neck doves. I am currently not a crazy bird lady because Dave is not a fan of them and we made a deal… no pets. Since I don’t like cats and dogs I had to sacrifice my love of birds and fish.


So… to make up for the lack of birds in my life, I was thinking about having birds in my wedding. I can sneak some in right? Think he’d notice? What is more romantic than doves when it comes to the theme of love?

I think these would be so cute on Thank you notes after the wedding… unique and very US…



I am currently looking for local artists to do the invitations for the wedding, I want something “Colorado” and help out a local individual who is creative by heart, I found this cool design and guess what? It’s got a bird snuck in there.



Handmade treats, cupcakes with a chocolate mold design on the top. I LOVE this idea! I bet I could make soap in it as well to giveaway as favors!







I’d love to have streamers of these around my reception hall, what a beautiful way to decorate after the wedding on anniversaries! A reminder of our family and friends enjoying the evening with us!






I know these will be at the wedding. The idea of having a wish tree and then to recreate it every anniversary so we have the thoughts of all our friends and family with us makes my heart flutter.

Valentine's Day - My Way - Giveaway

I love holidays. Any of them that allow me to decorate, come up with fun ideas and share them with my family is a HUGE bonus. I'll be the Grandma that spoils my grand kids every holiday with boxes of treats and visits to bake and decorate.

When I was a single Mom I remember the tightness in my heart knowing that Valentine's Day was coming. At the time had a month old daughter with 5 other children that were looking to me, and they had no idea my heart was in turmoil.

What would I teach them if I gave up and didn't try?
Would I teach them that love only matters if you have a significant other?

So I started coming up with gifts and candy to give to my kids before they went to school. I made a treat for my friends that had a note and chocolate as a way to show them they were appreciated by me.




Now that I am a proud Mommy with a blended family and engaged to a wonderful man, I am thankful that I learned such a valuable lesson during my single days. I learned that NO ONE was going to work at making my Valentine's Day memorable... it is all up to me.

Since then I've made baby shower invitations, graduation announcements and will be making Valentine's Day cards for my four year old in her first year of preschool, I've fallen in love with love My Way... and know that my children are blessed to learn that lesson from me without knowing it.
