Potato and Cheese Soup

This is my What's For Dinner Thursday Post for This Southern Girl's Nest!


Potato and Cheese soup



2 Tbls. Butter

½ Onion

2 cups diced potatoes

1 ½ medium carrot (shredded)

4 cups water

½ teaspoon pepper

1 ½ medium ribs celery (chopped)

1 teaspoon salt

1 TBL chopped parsley

¼ teaspoon dill weed

2 slices wheat bread (broken up into small pieces)

½ cup heavy whipping cream

1 cup shredded cheddar cheese


*Saute butter and onions



*Add potatoes, carrots, celery, water, pepper, salt, parsley, dill weed and bread.



*Bring to a boil, reduce heat and simmer covered for about an hour.


*Stir in cream and cheese 5 minutes before you serve


This recipe is amazing! I made it for the family last night and it was a total winner!


The flavor is fantastic and I doubled the recipe for all of us and it easily fed 8 people.

We had grilled cheese and French bread with it all… I only have a small bit left for lunch today, however it’s something I will make, freeze and save for those cold winter days when I don’t feel like cooking.

Thanks for posting..This is perfect timing! I will have to make this with Kelsie being sick, and then Kayla possibly coming down with something...And I don't feel so hot now either. {yuck!}

Thanks Honey! Can't wait to try it! :) The only thing I don't have on hand is the heavy whipping cream. I'll have to get right on that!
