Pumpkin Bread and Grasshopper Pie
I had my annual Yule party last night and made Grasshopper pie to eat with the meal.
Did I put it out?
Did I remember it?
Nope... totally spaced the delicious minty goodness that was in my freezer.
Did someone find it and still eat it?
Of course they did... because it is delicious!
So.. here it is, It's a wonderful pie that does not need to bake however, still is delightful.
Grasshopper Pie
Feeds 6-9
For Crust:
16 Oreo cookies
2 TBSP of melted butter
*Grind cookies fine and mix with butter.
*Line 9 in pan with mixture, reserving 1/2 cup for the top.
Note: I usually buy the crust already made, it's easier, however if you do make it on your own, mint Oreo cookies are a great cookie to use. Also, if you buy the crust ready made, don't forget a few Oreos, or you will have to use festive M&Ms like I did!
Filling:
2 Cups miniature marshmallows or 24 large ones
1/2 cup of milk
2 TBSP Creme de Cacao (Brown)
2 TBSP Creme de Menthe (Green)
1 cup whipping creme
*Melt marshmallows in milk
*Let cool.
*Add Cacao and menthe
*Whip the cream and fold into the marshmallow mixture (make sure you fold and not stir!!)
*Fill Oreo lined pan.
*Sprinkle reserved crumbs around the edge of the pie
*Freeze 5 hours or over night.
*Keep in freezer, take out about 15 minutes before you cut.

Wow...that looks like wondeful gooey goodness. Using the mint oreos for the crust probably takes it to a whole other level! This will be fun to make with the kids on Christmas vacation. Thanks for sharing the resipe!
My mom used to make these too. They are soooo yummy. How could you possibly forget about something so delicious?!
